Playstyle
Iroh is a mixup based midrange character who relies on the tea install to expand his moveset and improve some tools. The counter itself is the most substancially changed move with tea, as it allows followups without actually hitting the move.
If you like excelling in the midrange, and having a strong amount of tools available at the press of a button, Iroh is your man!
Metagame
Iroh is ranked 24th out of 29 on the current tier list, in the C tier.
Iroh is considered to be an "anti-zoner": he benefits most in the midrange, using his Tea install to make his kit even deadlier. Tea in particular unlocks some of his strongest attacks, like his tea-buffed Neutral Air as well as being able to use his counter moves without hitting the counter. Iroh also has some particularly devastating Aerial Strongs, notably his Up and Down Air Strong. These moves can snipe the opponent onstage and offstage from pretty much anywhere if they aren't careful. Iroh also can use his air strongs and Tea as a mobility advantage, flying across the stage out of the opponent's threat range. Finally, Iroh has a rather unusually long and fast Down Strong, which he can combo into itself at low %s for free damage. Finally, his heavy weight makes him a little difficult to take out compared to other characters in the game, and whiffing a punish offstage can be dangerous with the threat of his air strongs.
However, Iroh does have some flaws. He is a slow heavyweight with an above-average fall-speed, which makes him pretty easy to combo. He also relies a lot on his air tools to get stuff going, which means anti-airing him can spell trouble. Iroh also is not particularly combo-centric, and the combos he does have are either very simple or require awkward routes. Iroh also doesn't really a reliable projectile, so he has to rely on ranged attacks to keep his opponent out, which means rushdown characters can open him up handily.
Iroh released in a somewhat incomplete state, with some of his frame data being much better than intended. This made him a very controversial character in the metagame, with some discussions about banning him until a fix was released being brought up. Ultimately, though, this never came to be, and after Patch 1.13, he has been fixed, having proper frame data. Iroh has since been considered a mid or even low tier character, with only one or two dedicated mains of him to speak of. However, being the latest character, he is also relatively unexplored, and as such, some community members believe he might be hiding some hidden potential.
