A: It's up to entirely which meter you prefer using, You can't go wrong with either or. As for characters; Just play whoever for the most part.

A: On a surface level, Pro adds Dan Hibiki and Joe Higashi as well as a bunch of balance changes. For a full comprehensive list of changes, this gamefaqs page details all of the balance changes and more in the Pro version. And uhh...stay away from the PS1 port.
Q: Where could I find match footage?
A: A lot of it is very old, So you'll see a lot of old B5 footage or old Japanese arcade footage. However as for modern footage, Bas has a bunch of vods in more recent years of CvS1 tournaments.
